If the weather ever changes. I would like to paint the top irons on my roadster(31)... Do i just remove the plated screws to do this?

Yes,
There are also 2 screws on each side of the front header that attach the top irons to the header.
Usually, the irons are painted prior to installing the bows, header and top covering but I think with care, the irons should be able to be removed for paint.
