Could someone explain what the knobs and switches on a 1927 model T fordor do

One is for the lights, there is a choke and there is a carburetor adjustment for fine tuning.

The ignition switch is in the center of the light switch. The light switch is the part with the handle.

Now for the kicker, we can't see your dash so don't know what else may have been added. I suggest you get an owners manual and do a little reading. All the normal parts suppliers should have them in stock, or at minimun, post a picture of your dash.
