Default 1935 - 21 stud head re-torque hot or cold

Guys,

On a newly rebuilt 21 stud flathead. Do I re-torque the heads while hot or cold with cast iron heads? And how many hot/cold cycles do I re-torque the heads?

Cold and till they quit moving. What kind of gasket?
