What is the easiest way to remove zerks on clutch and break pedals?

If they are press in type, use a pair of battery pliers and simply twist and wiggle them out

As Bob said, the original press in type, just pull them out. If they have been changed to screw in style just unscrew them. lefty loosey

If you have the earlier pedals that don't have the fittings, you can add fittings by removing the pedals and drilling and tapping 1/8 NPT and adding grease fittings with 1/8 pipe thread. For my car I added them on the bottom because the floor boards are hard to get out. Remove any burrs inside the bores of the pedals and check the fitting as you tap to make sure it does not go through. The pipe tread is tappered and you need to stop before it is too deep.

Forget the brakes, they really don't work.
The clutch always sticks, and starts with a jerk.
My car grows red hair, and flies through the air.
Driving's a blast, a blast from the past.

If you do this before you install the pedal bushings you might need to drill a hole through the bushings after you install them to allow the grease to get to the pedal shaft (I drill a 3/16” hole). On my ‘31 the original “restorer” had installed grease fittings but had not drilled the hole, hence the grease had nowhere to go.
