Default Thermostat for 1937

In the summer my car runs close to 200° in the winter it runs at about 135°. It is a recent rebuild. It seems like I might have a thermostat problem.
I've been following Old Henry and his research. It seems like the Stant 14157 might be good for me, but I was told that this will not fit my engine. Anybody know if this is the case or not?

OK I can do that, but is there a better one to use?
