Default Clutch finger depth

Les Andrew's book says the depth of 5/8 of an inch for clutch finger.What should the V8 clutch depth be for the Model A be set at?

The same. 11/16 should be the nominal measurement for both

Is the 11/16 measurement with the plate and disc bolted to flywheel?

Yes. The fingers should be .002" of each other.
