Default head gasket

Is the bead side of the gasket go (towards the head) or down(against the block)?

Most people run them crimp to the head so it doesn't leave a 'print' on the block deck. I'm a renegade, I like 'em crimp down with two coats of copper spray.

its supposed to go against the head, that way any wear caused by the fire ring will be on the head which is easier to mill than deck a block

Has anyone removed an original gasket to see which way Ford placed it?

If it mattered, Ford would have documented which way the head gasket was to be installed. It apparently was not important to Ford.
