I have bought two sets of new Offenhauser heads in the past ten years. I know one set came from Patrick's, not Speedway, and they included instructions to torque starting from one side and ending at the other side. I thought this was odd because all previous Flathead torque specs said start at center and work in sequence towards the ends. It's possible that Offenhauser recommended this to reduce the possibility of warping their aluminum heads if someone initially torqued them too high when starting from the center.
In either case, I think flatjack9, JWL and JSerry have offered the best advice on this thread.

Many folks do this after spray coating the copper head gaskets with something like Copper Coat or Aluma Blast paint to help prevent the normal contact reaction between two dissimilar metals such as copper and aluminum.
