The temp probe should be at the water outlet.
I am using the Vintage Precision thermostat housing that incorporates a port for the probe, a great solution.

I just finished installing a mechanical temperature gauge. I have a water outlet neck with a tapped hole for the probe.

Outlet.

If a probe is places in the inlet it will measure the cooled water after passing through the radiator. The outlet will give you the temperature of the water after being heated by the engine. I guess one could install both and see how effective the radiator is working.

I use the probe pipe that fits in the upper radiator hose . You cut the upper hose and slip the probe pipe between the two pieces of the upper hose. All that you will need is the probe pipe and a couple of extra hose clamps . This is the easy, least expensive way to go. The probe pipe removes the risk of breaking the expensive upper water outlet. Heat rises and the probe pipe puts the probe at a good spot that isn't very noticable .
