The temp probe should be at the water outlet.
I am using the Vintage Precision thermostat housing that incorporates a port for the probe, a great solution. A's Always Dave |

I just finished installing a mechanical temperature gauge. I have a water outlet neck with a tapped hole for the probe.

Outlet.
If a probe is places in the inlet it will measure the cooled water after passing through the radiator. The outlet will give you the temperature of the water after being heated by the engine. I guess one could install both and see how effective the radiator is working.
