Default Head diffferences

I was wondering with the differences in compression ratios that the various model A heads have where the volume is typically changed? That is how close does pistion get too the head that is a higher compression one. Or is volume reduced in the area near the spark plugs and valves ? Happen to be looking at this site and was wondering

The reduced area near the spark plug and valves, is the major contributing factor for the increase in compression.
