To make your clutch pedal engage sooner, shorten the clutch adjusting arm.

You should have an inch or so of free play in your clutch pedal.

Clutch pedal "free travel" is a big deal. It ensures the throw out bearing is not touching the clutch fingers with foot off the pedal. As the disk wears the free travel decreases and must be readjusted to prevent constant bearing rotation and failure. Too much free travel is only a problem when the gears start to clash and double clutching seems to be losing effectiveness. Adjusting the pedal travel requires disconnecting the linkage and some trial and error. After market linkage adjusters are available which simplify the job and do not require disconnecting. I think you are going to find that the adjustment you need is the fingers on the pressure plate. They should each be set at a nominal 5\8". Adjusting the linkage is only adjusting the throw out bearing clearance.

The fingers can be adjusted through the opening in the bell housing where you grease the throw-out bearing. However, it is very difficult and best done on a work bench or with the transmission removed.

I tried shortening the adjustment rod all the way and pedal has same result. There is 1 to 2 inch free travel before it disengages. The pedal has to travel 3/4 from floor before it starts to engage. It just feels weird to me and is hard to get used to. I would imagine since it was a total restoration it would be a new clutch. No slipping or shifting issues, just feels weird!

If there is no gear clash or chatter, and shifting is smooth - sounds like you are good to go.
