If you are digging this deep into your car it would be wise to purchase some in depth literature. It will come in handy for more than this job.

This is a very big and complex job. As Franklin suggests, get a shop manual. First thing, get a safe and reliable spring spreader for the rear spring. Removing and replacing the rear axle is, IMO, the most dangerous job you will ever perform on the Model A.

It is very unlikely that diff lube is getting on your brakes. Probably from the wheel bearing. There should be grease between the axle shaft and the axle housing. That's how the grease gets to the brg.

I have not done this, but I think that the rear axle seals can be replaced with the axle housings in the car.
The internal axles and differential can be removed in one-piece by taking off the driver's side axle housing. With this done, you can remove and replace the axle seals with new ones. While the drums are off of the car, also replace the grease seal in each brake drum hub.

I agree that both axles and the differential can all be removed and replaced in one piece from the drivers side . Its really not necessary to remove the axles and differential to replace the axle seals . It seems easier to me to just remove the axle housings one at a time to replace the axle seaLSThe axle housings can be removed , one at a time to replace the axle seals . I use a long punch to drive out the axle seals from the drum side of the axle housings . There is a special tool that is used to replace the ear axle seals . Brattons lists this tool on page 32 of their 2019 catalog , Part number 6270 . I use lscquer thinner to remove oil or grease from the brake linings . Lacquer thinner will remove all traces of oil from just about anything ,

The seal that is most likely causing the problem is the small seal accessible only from inside the axle housings. It keeps grease from entering the housings from overzealous greasing the wheel bearings. I'd try lowering the oil level in the diff first, well worth a try.

BrakeKleen works ok to remove oil from linings and drums. I have done it and then pack in kitty litter for a few days to remove all residue. It is more time down but you will be down a few days anyway if you need to order new linings and install them. I agree with only removing the axle housings if you don't need to do other work on the differential or U-joint
