My top material looks fine but the weatherstrip is aged and cracked. Is it possible to pull the weatherstrip out and replace it without ruining the top material?

Normally you should be able to that, but the unknown is if the top has been replaced you could find that someone has glued in the rubber.

Clastique Upholstery, Lindstrom, MN has the T=50 Cobra long grain vinyl. I thought the 36 had the Colonial grain but could be wrong about that.
