Waterpump nut
How much torque does one apply to the waterpump packing nut ? I mean, to stop it leaking ?

Just enough to stop the leak. Any more will prematurely ware the packing.

If you can't stop the "leak" with gentle pressure on the packing nut, you may need more packing. Keep in mind that a drip once every now and then isn't a "leak".
