Seems like the solution. Since you are extended to full adjustment. You can lengthen the rod by welding (tig) up some 1/2 stock in-between the threads. Seems strange you'd need to do this on a stock replacement. If it's stock or the arms are not right ones or is this not stock?

If you go to Macs and check out 32 12199-1 10"
32 10570-1 9" Its the new fingers that are the problem,
Those screws set fingers and also set the distance to throw-out bearing.
I would send mine back, but to lazy to take down again.

A fix that could be done is when the throw-out bearing is put on hub is place a 1/4" spacer to move the finger closer to throw-out bearing.

The clutch fork isn’t installed backwards against the throw out bearing ?

How can you tell if the disc is installed backwards?

I would purchase a pressure plate and clutch from Fort Wayne Clutch or Vanpelt and be done with it. Both have quality items. Sounds if though you may be dealing with some off shore junk.

I think Ken has the right idea and replace with a Ford Long pressure plate.
Fort Wayne has these or find one to rebuild.
This is a ford 10" look at the fingers, the new ones were to hard to copy.

Well, now I have Discovered that the ten inch clutch from Mac and the flywheel from speedway are both bad. I will be sending back both of them. I wish I had asked all of you guys about these measures before I went to the trouble doing this.
