Patrick, I was about to mention David was posting to me but saw David beat me to it. I would call my dash without an ash tray a medium to dark gray.
Unfortunately, 3 owners back was a guy who restored 33-34 Ford radios and of course he put one in. I have the original side curtains that go with the original top, and some other previous owner covered the seats with 50s dinette set vinyl. I am leaving the car as it is. I can drive it to a car show and park next to a nice restored car and everyone comes to look at mine! My buddy Bill Steil restored it mechanically and I got it from him.
