I've sung the praises of the Fun Projects can style voltage regulator here for years. The six volt version has a maximum recommended amp rate setting of 15 amps. Set the third brush for a 15 amp charge . The 12 volt version recommends 8 amp charge but the guy that makes them said I could turn it up to 10 amps for brighter lights because it would never charge that high unless the demand required it. Twelve volts needs only half the amps of six volt to do the same job. The completely stock generator works better on 12 volts than it does on 6 with half the amperage draw. Fun Projects even has an 8 volt version just for grins and giggles. You simply set the third brush for the maximum amp charge recommended by the manufacturer. I don't know anything about the Delco Remi regulator but I feel that 15-16 amps max for 6 volts would be safe.
