I had the same squeeking noise after completing the restoration on my 29 roadster. It would go away when stepping on the clutch leading me to think it was the throw out bearing. I then realized it was coming from the front of the engine, removing the fan belt didn't make it go away. A squirt of oil onto the motor mount where it passes through the front crossmember stopped the noise. Almost 8,000 miles later it is still quiet.
