No record survives as to when individual vehicles were assembled. What does survive is a record of when the engine/transmission assembly was manufactured. Accordingly, your vehicle build date could range from two weeks for domestic production to two or more months if the vehicle was assembled outside of North America given the pace of ocean freighters of the period. (At that time, V8 engines were only produced in Dearborn and across the Detroit River in Walkerville, Ontario.)
