Yep, the aviation industry use vacuum to drive some very important instruments, the artificial horizon, and DI( direction indicator)
They use an engine driven vacuum pump with an instrument panel indication of the ‘vac’ available. I am sure electric pumps are available.
Works well and even the BIG ones use it. But I would not recommend it in your application. Don't reinvent the wheel. It could be done, but why??
