We use dual shoulder harness set ups in the aircraft but they can be a PITA to put on and they wouldn't look all that good in a convertible car with the top down. It might be OK for any other body type but a single belt would be more practical.

There are a lot of late model vehicles that attach the shoulder belts to the seat back itself. So you don't need to attach to the B pillar unless you want to keep the original seats.
