Any restoration shop won't necessarily be too good for you, since most of us do what the customer wants us to do ...as long as it is profitable. For example, if you don't want the pits bodyworked on the Frame, then a good restoration shop will honor your wishes, and paint it as you wish. The same applies with the mechanicals or sheetmetal. As long as it isn't unsafe, many shops will do it as you wish. Again, your money and most shops work on Time & Materials anyway, so as long as it is profitable, many shops will do it your way.
As far as Terry flying under the radar, Terry is like 72 or 73 years old now and his 'glory years' of dealing with his employees and customers, ...and meeting demanding customer's unrealistic deadlines or supply issues are probably things he wants to be behind him.
