I recall that the chevy valves are longer, but I see no reason why they would not work just fine unless:
A) The groove for the keeper is too close to the end of the new length
B) The stems are hardened, but only at the tip.

It's always been interesting to me how after 92 years of automobile engine developement, our flathead ford valves are still the industry standard with, I would guess millions produced annually.
