Documentation provided with the 1936 cars called for 5 quarts of oil.
Engines can have build up of sludge inside. We've seen examples here on the 'Barn showing it can take up a lot of space. Over a quart of sludge removed from the oil pan (and the valve valley areas which is not part of this question). This is one explanation for quantity questions.
There are complications with dipsticks. There are several dipsticks that would fit in your tube. As I understand another complicating factor is there was a felt washer which would seal at the top of the dipstick/tube interface and if it's missing the stick sits lower in the pan.
