Me, I'd put the pan on the assembled engine, mount the engine in the chassis (with full weight), put 5 quarts of oil in it. Then you can see where the level is on the dipstick and mark the dipstick with a blunt chisel.

Now you know exactly where the oil level should be - in your car, at whatever angle it happens to end up in.
