Running a thermostat shouldn’t make your car run hotter! than your normal temperature! And some say that adding a thermostat will help with an engine that runs hot by slowing the coolant flow. Up here in central Illinois I run a 180 degree stat. at idle 175 to 190 degrees is normal!
