They are not interchangeable, the ring gear ends up in a different location between the two and the starter will not engage properly (as in it won't work). There have been end view photo of the two posted on the Barn in the past.
Clutch size mostly depends on what you want, they are interchangeable as long as the flywheel you are using is drilled for the clutch/pressure plate combination you are wanting to use. The 11 inch clutch/PP is more of a heavy duty truck type of clutch and a lot of people do not like the clutch feel with the large setup. The 10 inch and 9 inch are much more popular for normally driven cars/pickups. If you are interested in acceleration performance the small the diameter the quicker the acceleration (lower rotational mass). Again, you need to be sure the flywheel is drilled for the PP you are wanting to use. A machine shop can add the proper holes if they are not present.
Another note: The 11 inch PP will not clear some bellhousings.
