I have a couple of different kinds of engines that I wanted to run, so I wanted to make a universal stand. To do this, I bought a cheap engine stand from Harbor Freight, and cannibalized the guts of it to make a universal rear mount. For the front, I did an "analog" of the old Hurst system. (Remember, you would get the specialized front mount for your engine and then buy the proper frame adapters?) The rear mount is mounted rigidly to the stand, while the front mounts can slide back and forth to accommodate different length engines. I have an early Hemi on it now and have an Olds Rocket, and a couple of 8BA's to go. If you're only doing one engine, you obviously don't need to go to the trouble. The adjustable rear mount does seems the the easiest way to go, though. I'm in Florida for the winter, so I can't post pictures, but I'm sure you get the general idea.
