Did you do anything to keep the thermostats from moving? If the thermostat rotated in the hose it won't work properly.

I think you have the wrong head gaskets. If you look at Felpro they make a gasket with round holes like you are using and they make another gasket that has trapezoidal holes which match your block.

He actually said he does have a pattern for a '40, but he only made one and didn't get feedback on how it fit. I had my top shop make one for my car when they did the top but it fits pretty poorly....
