Muratic acid will dissolve that rust followed by neutralizing. Then a good metal prep and then the sealer. Just make sure you do it outside (acid)

Thermostats will regulate the min. temp your engine will run at not the max. In other words engine will not run cooler with 160 vs 180 when the stats are full open. With that in mind I prefer 180s as...

they should be in the upper hoses where they connect to the head. drain some coolant from rad. and pull hose to check.

I would be leery of the fuel pump diaphragm if you are using fuel with ethanol. You should rebuild it with a modern kit and now you know how to do it.

Your kit should have small black screws which are easier to use than staples .
