Looks good from here. In fact the whole thing looks great! The 390 carb won't make it run lean if it's too small (quite the opposite in fact) but might limit power at the top end if the engine can...

I believe the end play on the shaft/gear assembly in the pump body is controlled by the drive gear clearance to the pump housing. That play should not allow the pumping gear to bear against the end...

Not goofy at all. When I was young and working at the local repair shop the shop owner said to do just that as long as the gasket looked good. Never had one leak, even if they were hard. I still do...

I drilled holes in a junk head a while back...may have posted the pic but not sure. The domes are thicker than they seem. Bet you have no worry with the casting pit.

fordor41, the bypass on a filter opens at 20# (or whatever the designed rating is) DIFFERENCE in pressure between the inlet and outlet side of the filter, not the oil pressure the pump is delivering....

Fortyone, are you using only jumper leads from a battery to crank the engine? If so, hook up the actual battery cables and it'll crank far better. 45 ft/lbs is tight but not extreme as some rope type...

GB, the EAC heads look like they'll fix the problem (never would have expected that problem!). The EAC's do have a bit less compression but you'll be just fine...you're not building a racer. Good job...
