I have used both with good results, but lately I have just been using the copper ones.

I like the two-piece late 31 version (the one you show in copper). I have found that some versions of the one piece don’t line up properly with all the holes. This leads to folding of the gasket, especially between the two center (2E and 3E). Which won’t seal.

I like the 2-piece, but I think the 1-piece is cheaper.

I agree with jayjay#4 on this.
