Dennis Carpenter Reproductions is the manufacturer.

1932 4 Cylinder: Carpenter shows in stock. (Same a V8 kit but includes "start" knob)
1932 V8: Carpenter shows in stock, I have 1 set in stock.
1933: Carpenter "out of stock", I have 1 set. Appears to be the same "choke" and "throttle" knob as 1932, but includes rounded glove box and ash tray knobs.
1934: Carpenter "out of stock", I have 1 set. Different style knobs.

I presume the 1933 and 1934 pickup used the same "choke" and "throttle" knobs as the cars, but not the glove box and ash tray. Were there other knobs pickup specific?

Carpenter's on their website seem to have a policy of showing "out of stock" on items they have intent on manufacturing again and deleting the part number for those that are discontinued.

1932-34 four-cylinder passenger cars used the same knobs, 1932-33 V8 passenger car knobs were the same, 1932 commercial vehicles and trucks used the same knobs as passenger cars, 1933-34 commercial and truck knobs were the same as the 1932 knobs except that they were black instead of brown. As noted above, the '34 V8 passenger car (and some commercial) knobs were unique.

Early '33 glove box knobs were round similar to the '32 deluxe coupe glove box knob. Mid and late '33 glove box knobs were the same as the '34 knob and all '33-'34 ash tray knobs were the same.

were original knobs made of phenolic (bakelite) type plastic, or with an early version of soy based plastic?

Based on the photo of Henry whacking a deck lid made of soy in the second half of the 1930s, my guess would be phenolic plastic for the knobs.
