what is the difference between an open car dash and a closed car dash. can you massage one or the other to make it fit

Massage it? It would demand considerably more effort than a simple massage.
Closed car dash is narrower than an open dash. Closed car dash is deeper than an open dash. Closed car dash has an opening for the windshield crank mechanism while the open car dash has no such provision.
Glove box lids (openings) are different.
Photos attached are convertible coupe and a (standard) coupe. I'd think you could discern from these photos just how much effort it would require to do it ("massage") nicely.

what about a a 39 sedan, they look like the convertible dash and not so flat and skinny like the coupe. you cant find the convertible dash anymore. i gotta try somthing

Here is a picture of a 1938 Ford Convertible Sedan Dash. Could this Dash be from a closed car, as there is the provision for the crank to open the Windscreen?

As Kube said they are different animals.
However a good sheet metal worker could make a passable looking one from a 39 sedan/coupe ( they are the same ) if you are not too worried about authenticity. About 4 days work and 1 day of that would be on the glovebox lid and hinge. I have a mint LHD example hanging on the wall at my place but I'm several thousand miles from you in New Zealand.
Keep advertising on the Ford barn or the EFV8 website first. I recently sold a RHD one - now they are really scarce.
Don't even think about a 38 one - it wouldn't look at all correct.

All '39 closed are dashes are identically shaped / formed.
The open car and wagon dashes are identical.
