When the engine is ideling,,,,is something in the transmission spinning :idiler gear? or does it only engage the transmission when shift into gear?

This is for a model B motor and transmissiion.
I believe this is almost identical to a model A operation.

I'm not very knowledgeable about what occurs inside a transmission. To my understanding, when you're idling, no gears are engaged.

Only the input shaft & the cluster gear & the reverse idler gear are turning.

When you're idling in neutral, the transmission input shaft is spinning along with the gears on it but only the front half of the shaft and the gears are not engaged with any others. The reverse idler is also running but not engaged.

Are these spinning parts oiled when you fill the transmission with oil?

yes oil is getting slung everywhere, its also how your shift forks get lubrication.

The same components are true of just about every manual transmission for any era. With the clutch out in neutral the input shaft is spinning along with a main gear cluster.

Here's an excellent video explaining Sliding Mesh vs Synchronized manual transmissions. Even though it's Chevy its vintage and the Model A trans essentially operates on the same principle as the non-synchronized sliding mesh trans.

Here's a cutaway at the Gilmore museum. The input shaft is on the right, and as you can see it's drive gear is always engaged with the cluster gear, which also engages the reverse idler, so those gears are always turning when the engine is running and the clutch pedal is released (foot off the clutch). The tranny in this picture has high gear engaged, so the input and output shafts are both tuning at the same speed. If that first gear behind the input shaft (second and high) was slid back about 1/2" then the tranny would be in neutral.

If the clutch is depressed none if them are turning! Otherwise, as stated the input gear and shaft, cluster, and reverse idler are driven with the clutch out (engaged).

If the clutch disc is stuck to the flywheel they are of course spinning all the time. This of course is not normal.
