Not sure this would help in California but here in North Carolina there were a lot of furniture shops that went out of business when the business was move off shore. The people who worked in the furniture shops are really good at upholstery and will do old cars for a reasonable rate. Here people just ask around to locate those people. You may try putting an ad in Craigs List.

Where you at? In Anderson Ca there is THREADS By ED. Gave him pic's from Henry's Lady and he matched it. Except for the mohair.
He does one car at a time and is in high demand.

Palo Alto Upholstery was a great shop in the SF Bay Area but alas, they are closed down after 40 years.

You don't say where in California you reside. Here in San Diego is a shop that I recommend. Mark Luhr's Custom Upholstery. 619-449-9172
He was a certified Le Baron Bonney installer and also does custom work.

I would think that Charles McKeown with Rusty A Restorations in Placerville would be a great one to contact since you already have the kit. For some reason, I think he has restored a couple of 180As, and should be familiar with them.

Outside of that, since you already have the kit(s), then surely any reputable trim shop should be able to handle this for you.

Since California is about 800 miles from one end to the other you might narrow down your location.

Most of the folks in The San Fernando Valley A's use Jack's Upholstery in Tarzana, CA
